
A RICHER FLAVOURED BEEF COMES FROM THE LONG AND VARIED LIFE OF A DEXTER HERD
Our small suckler herd of Dexter cattle is raised to produce outstanding beef whilst conserving and improving the Dillay’s unique environment.
Half the year they graze in our hidden valleys, moving from one pasture to another, browsing low branches and foraging in mixed woodland, trampling bracken and knocking back nettles.
In the autumn we walk together up to the top pastures where they remain on well-draining soil, munching on hay and haylage from the Dillay and its neighbouring meadows.
Surrounded by wildlife reserves, woodland, wetland and wildflower meadows, they range a pesticide-free environment and eat only what nature provides.
We cherish our cattle and everything they provide.

BEEF BOXES



Our care and attention to detail & tradition is reflected in the crafting of our meat AND our boxes.
Our local small family-run abattoir and butcher, Broomhall, age the Dillay beef for three weeks enabling a beautifully balanced, full flavoured beef.
The meat is then carefully butchered and packaged in air tight packaging. We wrap each cut in peach butcher paper and add a hand-written label.
Delivered the same day by hand or courier the following day, each Dillay meat box is beautifully presented in environmentally friendly, reusable packaging; unique 100% wool, cold box liners & eco-packs.
Each box is also accompanied by some of our favourite collectable recipes, a list of the cuts unique to your box and a hand written message. Another reason a Dillay box makes a wonderful gift.



BOX SELECTIONS


THE BEES

From their hives at the heart of the Dillay, our bees forage the surrounding carr, pasture and woodland for pollen. They distill the essence of the Dillay into delicious, creamy, sweet honey.
Collaborations with local artisans to create unique honey pots and vessels, will ensure the hard work of the Dillay bees is celebrated beautifully.
NURTURING THE VALLEY

Nurturing the valley goes hand in hand with nurturing the herd.
Their gentle grazing maintains this landscape and supports biodiversity. We are contributing by planting and guarding hedgerows and fruit trees, scraping out natural ponds and protecting the wetlands among other endeavours. We are also exploring how to carefully share the beauty of this unique spot. One of our dreams is to create an artist’s retreat in Rosie’s cottage.
Once rebuilt, it will offer a haven and a base from which artists can seek inspiration in wondrous surroundings.
